Update virtio-win version to >=0.1.262-1

The current virtio-win version is relatively old and could/should be upgraded, however it breaks with some Windows versions.

A new stable virtio-win version, one that works across all Windows versions, needs to be identified. If a common virtio-win version does not exist, switch to mapping Windows versions to a known-good virtio-win version.

I was able to upgrade the virtio-win drivers to 0.1.248-1, but they start failing for Windows 2012 after that (>= 0.1.262-1). I'll have to figure out what changed and why it fails for these particular versions.

So, 2012 and 2016 are failing with an "incompatible drivers" error. 2008, 2019, 2022 and 10 are working correctly.

It seems related to https://github.com/virtio-win/kvm-guest-drivers-windows/issues/1100

I'll check to get Server 2025 and Windows 11 integrated in the next weeks. It should provide a better picture of the situation with regards to the virtio drivers.

Adding Server 2025 required to change the VM's disk bus to virtio-blk due to the disk (backed by virtio-scsi, by default) not being "online". However, this change doesn't help for 2012 or 2016 with the 0.1.26x series of virtio-win drivers.
