Most users would like to use different sizes for mobile, tablet and desktop. So user should be able to set different typography options based on sizes set by the theme...

Not if you need tons of typography options for demanding customers :) 

So let's say, there is a field for Body Typography, a user should be able to enter 3 settings for each screen size. I guess Font-size would be enough, but...

You are correct, no need for that, but user should see which X is for which size. If the option title is "Body Typography", it will be repeated 3 times....
