Per comments on PR #1360, this modernizes and harmonizes (makes consistent) the use of the term "email" in the documentation. It remains as "e-mail" unmodified in places where this spelling...

Per [comments in this issue](https://github.com/mastodon/mastodon/pull/25532#discussion_r1242383615), the [websocket API](https://docs.joinmastodon.org/methods/streaming/#websocket) is currently only really findable via Google search - needs to be surfaced more obviously.
