by default only show high level information about the email such as the subject line, or key parts of the body (swear words/blacklist words).

Moderators can click to unhide content, perhaps sentence by sentence, but Squadbox stores and shows a log of what is un-hidden by whom.

both a privacy feature for owners as well as a feature to shield mods from sensitive content they don't need to see.

Do this for owners too (some people mentioned being really curious) to make it harder for them to look. Logs are public to the entire squad for owner actions as well, as social encouragement not to look.

As aside, if owners wants to see an email, maybe we should require them to delete/moderate it afterwards, because at that point it's useless work for a mod.
