${BREW_PREFIX} causes issues on clean install without brew

Making an issue for myself to follow-up on this! Testing out Linux install on a machine that has never had Homebrew installed - ${BREW_PREFIX} variable being empty appears to be causing issues where it leads to FFMPEG_BIN being set to /bin/ffmpeg.
