Document the v2/orders REST api

So far the documentation I've found does not address all of the available supported options in the v2/orders REST API. For example in "../v2/orders", the parameters like "until" and "nested" are not explained in detail. This can make for an infuriating developer experience.

I've noticed that I'm only getting orders data back about 14 days. Is that by design? Is there a way I can increase how far back it looks?
