Flat surface / non-solid / one-sided meshing

I'm trying to do photogrammetry on flat surfaces for PBR texture workflows. I haven't gotten a great set of photos yet so some of these problems might just go away with a better dataset, but I'm wondering if there are specific setups/settings that would help with meshing flat surfaces.

I'm getting an OK front side of the mesh (this was a quick and sloppy test, I think a better photoshoot might help get rid of the small holes): 2022-03-31T12-49-22_ApplicationFrameHost_ePQ8 but an absolutely atrocious reverse side of the mesh, which makes it more annoying to work with and I'm worried will cause trouble while baking: 2022-03-31T13-36-56_ApplicationFrameHost_x3kX

Is there a way to get Meshroom to generate a one-sided mesh for these texture captures? Are there some settings I can work with, or is this a whole new type of mesh reconstruction that would have to be implemented.
