Upgrade test deps junit/hamcrest (removes CVE warning on Maven Central)

Thanks for considering this pull request, it upgrades junit 4 to 5 and includes separate hamcrest matchers.

I would appreciate a new version published, (say 1.1.2) after/if pr is accepted.

Hi @alexp1917. Thank you so much for your PR and the time you invested here. It's been a while since I published a new release. Let me go through it thoughtfully over the weekend.
