Thanks for the experience report.

The Windows XP setting was introduced to avoid a user interface glitch in Internet Explorer 8 (menu bar) which is present with the Windows 7 setting. IE8 is not strictly needed except for its mshtml engine, but since it is occasionally spawned by SuperMemo in some operations it made sense to identify as Windows XP to achieve better compatibility and better align with user expectations.

Recent Wine editions may have improved in some compatibility aspects. You might want to try setting the whole prefix to Windows 7 and test for yourself. It is also possible via registry or winecfg to identify as WinXP only to iexplore.exe, and Win7 to everything else.

Personally, I have not used this edition of Wine with SuperMemo in any of the two settings mentioned. I will not have access to any hardware to test until december 2021, so I cannot judge which is the best solution at the moment.

After some tests, I found this:

CJK languages, such as Chinese, Japanese, Korean, will become so slowly. But ASCII is smooth(like English).

So it seems like a problem with xp+ie8 itself.
