Adding updated open canvas from OLS

@KirstieJane suggested creating an updated version of the OLS-2 Open Canvas to help strategically plan the next stages of the project. This one is mostly focussed on the general, broad potential of the platform and participatory/citizen-science methods. All thoughts appreciated!
