I'm on the latest mac chrome, 95, and can't seem to find the enable flag?

So that flag is only available in the canary builds of chromium browsers. Are you using Chrome Canary?

No, i am not, thank you. The origin trial token, does it work in the regular builds?

Yes, the origin trial works as well, but only for domains you specify. Here's a blog post from the WebGPU developers that details how to sign up for the origin trial.
