Support vitest

At the moment jest is used. An plans to also support vitest depending on the nx workspace configuration?

I have never worked with vitest, so I have not jet directly the plan to add it. But think, i saw someone forked this project and tried to add vitest, but never mad a PR.

I'll let this open and dig into it, as soon, as I find time. But feel free to open a PR.
