Reduce talk of Type 1 fonts in documentation

A lot of our docs are still Type 1/".pfa"-centric. I don't advocate removing support for Type 1 from AFDKO, particularly as it's a good tool for transforming Type 1 fonts into other formats, but our docs should probably focus on other formats now.
