Option to choose the metric displayed as a label

Can I choose to use a metric for UDChart data, but use a separate value for displaying the result that is preformatted? For instance, use milliseconds for chart data but a humanized version for the tooltip, legend, and hover?

This would require a custom tooltip function. It's possible but there is currently no support for it.
