bug: documentation always builds in `<source>`

Problem

Since forever I can remember the documentation builds in <source>/docs/_build. This is probably not ideal, since it is not possible to have multiple doc-builds in parallel. At the docathon we couldn't really remember why we do it.

Steps to solve this

• [ ] Find out why we do it like we do it now
• [ ] Can we move it to the <build>-dir?
• [ ] Reasons to keep it at the current place
