Missileguidance - Stability coefficient causes unstable flight

Description: A clear and concise description of what the bug is.

Missiles with defined stability coefficients will turn erratically due to improper calculation of their weather vaneing. High immediate velocity change will cause a stability axis to spike, and will not properly give angles. Perhaps change to relative change? To investigate

this may be an engine issue. it seems that setting the model orientation occasionally just fucks up the velocity as well

maybe a gimbal lock issue; seems to occur whenever projectile crosses XZ plane. Probably need to manually calculate new velocity using ammo properties in the PFH (or do it in an extension lol)
