Feature Request: Add support for OpenAI Assistants

X-post of https://github.com/raycast/extensions/issues/10082 Forgive me if this is a breach of protocol. The idea is to allow free text input into models (not just the pre-defined list in the dropdown) to allow configuration of the model names defined by the Assistant API.
