I haven't run it on an external disk, but I would imagine someone has. I don't know what this would be off the top of my head, but I guess...

Drat. Does `sudo vsdbutil -c /` now report `Permissions on '/' are enabled.`? And What does `sudo vsdbutil -c /nix` report?
Hmm. Can you try the enablePermissions command for /nix as well (and reboot)? I assumed the installer would have done that, but perhaps not.
Ah. Perhaps. A complete uninstall is tricky and might be confounding. Were you on Catalina? It was working with the same general setup? It might be worth following the not-quite-released...
