Enable signature block scaling for all types

We currently support scaling for logo signatures (cf. ef930178 209f81ea 58433c6f 8736033b) via a config slider.

I'd like to extend this to all types of signature blocks. I'd also like to make scaling more natural -- dragging the sides/corner of the signature block in the preview/positioning panel, maybe?

Likely not a simple change since it might require re-visiting how we interface with PDF-AS' profile system.
Current profiles hardcode dimensions, and I don't think scaling the entire block is trivial. Having to scale up font size might get ugly.

I'm not sure what I'd scale it relative to. Showing it relative to an entire A4 page makes details of the preview impossible to see.
