[FEAT.] : "change instance version" for updating / downgrading instances

Problem

currently, when a minor Beat Saber release update is released (such as 1.40.5 -> 1.40.6), you have to delete the outdated instance and then create a new instance. This is incredibly annoying, and if you have set up your own Junctions (such as creating custom WIP folders), it is also incredibly time consuming.

Solution

The solution to this would be having the ability to change game version of an instance and update the instance to the chosen version. This would be very important for migrating between Beat Saber versions where mod support is identical (such as 1.40.5 -> 1.40.6). For releases with major changes, you could ask the user if they want to have their mods moved to a "yeeted mods" folder (since BSManager disables yeeting for the Beat Saber launch options iirc).
