Target specific versions of WordPress in theme.json docs

Description

In the "Developing with theme.json" section of the Block Editor Handbook, the example shown uses the latest version of the schema (https://schemas.wp.org/trunk/theme.json), but there's no mention that a theme developer can also target specific versions of WordPress (https://schemas.wp.org/wp/5.9/theme.json).

Hi, there're specific reference documents for different versions of theme.json https://developer.wordpress.org/block-editor/reference-guides/theme-json-reference/

The how-to guide should be updated to be focused on examples. This is up for grabs, anyone can contribute.
