fix: upgrade to axum 0.7

Description

Updates to latest version of utils-rs and thus axum 0.7 and http/hyper v1 deps.

Also:

• Removes unused src/extractors which were giving some clippy warnings.

Remaining work:

• [x] Fix header for prometheus-http-query
• [x] Consider re-using global reqwest client
• [x] Merge utils-rs and WalletConnectRust PRs and update versions here
• [x] Merge https://github.com/WalletConnect/ci_workflows/pull/7 and update version here
