Can I only have Windows on my device and get rid of android? (og: quick question)

If I was to use this project on a Surface Duo 2 could I not have android installed and just dedicate it all to windows.

you can, but I would not recommend it as there is little working on the duo2

without android your device will never boot again. You can limit space that android takes but removing it is currently impossible.
