Remove VTK dependency and use header-only alternative for reading/writing VTK data format

ViennaLS does not actually use many VTK algorithms and it is a huge dependency, so it would be good to get rid of it. It might be possible to pull the required headers out of VTK and just use them by themselves, although this does not seem likely.
