Update documentation to cover Cats useage

It looks like the latest version of this project now supports Cats. It would be great to have some documentation/examples of how to use this with Cats.

Is https://verizon.github.io/knobs/ the correct docs? The API seems to have moved on a fair bit from what's there no?

The CI that used to publish was taken down at Verizon. You should be able to get the latest version of the docs locally by running makeSite on a local checkout.

We're still looking for a replacement CI for automated releases and site publication.
