proton: set default_cpu_limit to 27 for Elden Ring

EAC produces the error Unexpected error (#1) if there are too many cpus. Testing on an AMD 9950X3D, it looks like it's happy with 27 or fewer, but not 28 or more, so set the limit to 27.
