No Server Logs when running on Quilt 1.20.1

This issue was noticed Here

When loading VS2 into my server, the mod should not block all server logs. This blocking issue causes my server panel to outright fail to detect the server being online, and causes getting the server status, player count, command outputs, or even debugging crashes to be outright impossible.

This issue does not happen on normal Fabric, nor on a client-side server.

I have traced a possible culprit to This Commit or This Commit, but I am unfamiliar with how Quilt/Fabric communicate.

Issue reproduction

Our server uses Quilt version 1.20.1 0.24.0-beta8

• Get Quilt 1.20.1 0.24.0-beta.8 into a dedicated server environment
• Install the latest version of VS2 into the mods server
• Launch the server
