Improve README with TOC and Project Descriptions

The current README.md could be more structured and informative for new users and contributors.

Add a clear table of contents.
Briefly describe each project before listing them.
Include basic instructions to run one or more projects.
List global prerequisites (Java, Node.js, etc.).
