Turning off telemetry is not documented

The package does not relay telemetry to packages.unstructured.io if DO_NOT_TRACK is set to true or if SCARF_NO_ANALYTICS is set to true. Given that this telemetry is enabled by default and is opt-out, it makes sense to document the instructions to turn it off within the official documentation https://unstructured-io.github.io/unstructured/introduction.html.
