make Treecutters cut down old trees instead of young ones

Would it be possible to make it so that treecutters prioritize mature trees that are fully grown so the young ones have a chance to repopulate the land?

Excellent idea, both with AI and human player's woodcutters.

Also it would be good if the AI would aim for sustainability and wouldn't deforest the place too much at the start of the game (unless it is a map with lots of trees).

It would be helpful if woodcutters spared newly-grown trees, indeed. However if they prioritize fully-grown trees that also means they'd focus on exactly those trees that can spawn new trees. Depending on population size, I'm not entirely sure how the change would actually affect tree spreading. Overall I think it would still improve things, albeit possibly not by as much as one would think in the first place.

Also, in order to intentionally clear an area of trees, the younger ones would need to be cut down as well... so woodcutters probably should not prioritize far-away adult trees over really closeby younger trees.
