Corrections to `README.md`

There are a few inconsistencies that need corrections in our README.md:

  • "Intended Functionality for DataArrays on Grids" heading is the wrong size
  • URL to Installation Guide is broken (https://uxarray.readthedocs.io/en/latest/installation.html)
  • The sentence "to emphasize it builds upon Xarray for Unstructured grids." should be updated

And a few more miscellaneous corrections.
