Add note in documentation about citing EISPAC

There should be a note in the readme or somewhere in the docs saying to cite the JOSS paper as well as the Zenodo DOI for the specific version (if there is one). See for example this page for aiapy: https://aiapy.readthedocs.io/en/stable/citation.html
