Define custom OpenStreetMap tags to load via Overpass

The majority of people will be happy with the default OSM tags defined by default (buildings, water, grass, etc), however there will be times where people will want to define tags in a custom way so they can have full control over the OSM data that is loaded.

Defining unique tags assumes you don't want the default tags and will overwrite them. If you want to extend the default tags then you'll need to define them with your custom tags. There are likely better ways to achieve this in the future.

The challenge is working out a way to recognise the custom tags at other points in the process, such as defining height and colour and any other custom processing on a per-tag basis.
