Monitor individual endpoints over proxy

Describe the feature request

The possibility to configure a proxy for an individual endpoint in a Gatus instance.

Possibly extended to the possibility to pass a set of environment variables, specific for the monitoring of an individual endpoint.

Why do you personally want this feature to be implemented?

Currently it is possible to specify environment variables for the Gatus instance and with that, specify a proxy configuration that the Gatus instance will then use for the monitoring of all endpoints in its configuration.

In our situation, we have one specific endpoint that we want to monitor, which can only be reached via a proxy. Should I use the proxy configuration in that Gatus instance, I would need to also specify the NO_PROXY variable for many domains, i.e. all the other domains. And extend that list with each new entry.

Or I would need to run a separate Gatus instance just for that single endpoint.
