CompatHelper: bump compat for Setfield to 1 for package docs, (keep existing compat)

This pull request changes the compat entry for the Setfield package from 0.7.1, 0.8 to 0.7.1, 0.8, 1 for package docs. This keeps the compat entries for earlier versions.

Note: I have not tested your package with this new compat entry. It is your responsibility to make sure that your package tests pass before you merge this pull request.

This PR is included in https://github.com/TuringLang/DynamicPPL.jl/pull/406. That PR is not merged yet since some package was holding back Setfield.
