I don't use macOS, but I think the last one (the T by itself in the red box) looks the best
As a certified Mac User™, I like the red box w/ puzzle, daniel4-scratch‘s proposal, and the red box w/o puzzle the best.
The solid red box with the puzzle logo retains the puzzle motif, which is some nice symbolism. My biggest problem (personally) is that the background and logo are too similar in color. daniel4-scratch‘s option addresses this problem well, although the logo should be a bit bigger.
The solid red box with no puzzle piece is nice as well, and I wouldn’t be opposed to it.
That said, I also don’t have a strong opposition to the current icon. It doesn’t really fit in with other icons, but I honestly don’t care all that much. I can see why people would, though.

By the way, I thought the thing around the T/S in the logo was a monitor (because it's a desktop app), not a block/puzzle piece.

As a Mac user, a plain "T" with a red background looks good, but would look better if it had a 3D or embossed styling like macOS Big Sur and later
