Allow to install pinned version via install.sh

Is your feature request related to a problem? Please describe. I want to make sure in our dev environment that we do not accidentally introduce errors due to an unknowngly updated version of oasdiff.

Describe the solution you'd like Maybe a version parameter: --version '1.1.1'
