For instance modlog member.

I would like to show nickname changes in a log channel, but I don't want any logs of, let's say as an example, members getting a role added or removed. So it would be nice to enable/disable further into each category and be more precise with what you want to log.

Could probably be added to other modlog categories as well, but this is the first I think of when wanting to use it. I decide not to log nickname changes because I can't turn off the other stuff.
