Just FYI until this is implemented. You should be able to use the mobile/dedicated app just fine. It's only the web app that has a problem with this.

I think instead of changing the color, showing the number of remaining items per list behind the name would provide additional information and solve this at the same time.

When creating a household, you can set the language to none, which will not add any default items/categories/etc and create an empty household.
