Installation - Docker image link fix + Windows & WSL2 config examples

3.1.0-0.3RC1 in docker is not available yet, then it throws a Not found error when trying to pull.

Added a docker-compose.yml file example for Windows + WSL2 as it needs a complementary volume and a special path to access jobs

Hello Thank you @XVanilor for this PR. It seems that there are some mistakes on the docker-compose: volumes for Elasticsearch are similar than those for Cortex.
