Docker build stuck at step when changing airflow user id to large host UID

Regarding https://github.com/The-Academic-Observatory/observatory-platform/blob/aa244153e944ad9d9ddf999895a678cc34b48845/Dockerfile.observatory#L12 and probably https://github.com/The-Academic-Observatory/observatory-platform/blob/aa244153e944ad9d9ddf999895a678cc34b48845/Dockerfile.observatory#L15 as well, but this part isn't reached. The usermod commands are giving issues on my new work macbook, I suspect because of the large UID....
