Component overwrite not working

Describe the bug Overwriting components as described in the docs https://thm-health.github.io/PILOS/docs/administration/customisation/components#overwrite-components-or-pages is no longer working.

Additional context This feature was possible with unplugin-vue-components; however, their current glob pattern matching no longer allows us to overwrite components. Work is ongoing to fix this issue, see https://github.com/unplugin/unplugin-vue-components/issues/831
