Make using values.yaml files more obvious and prepare some simple default config examples

The best practise for configuring the Helm Chart is by creating a simple values.yaml file where only those keys that need to be changed are present.

Right now we have a section in the documentation which mentions exactly that but it seems it could be made even more visible.

Also we should add some simple config examples where we show how to ingest logs only or manage metrics ingestion etc.
