Remove dead files from V2

Description of Changes

I ran Knip over our source to see which code we have which isn't doing anything. This PR removes a bunch of dead files & unused modules that it's found.

I set cookieconsent.umd.js to ignored because we import it dynamically so Knip can't find it. I'm not really sure why we import it dynamically though. If we can, I'd rather import it directly so we can avoid potentially missing that we need to remove this file if it becomes unused in the future.
