Update documentation!!

Our docs at https://github.com/Stirling-Tools/Stirling-Tools.github.io are heavily outdated, Community support in updating these would be appreciated!

Currently, any click on "edit this page" in docs files @ https://stirlingtools.com/ will 404. A good start would be to make edits right from the page easier. Please review https://github.com/Stirling-Tools/Stirling-Tools.github.io/pull/2 wether it will fix this.
