Add category for AI

Could we get an AI block? There are so many ways that AI is being added everywhere that I no longer trust that I have it turned off everywhere.

The APIs would be what I'm most concerned about being blocked, not the user interfaces as much.

I have no suggestions of blocklists.

At minimum we would need a reliable curated source of AI providers, with a lengthy track record.
