upgrade apollo

Description

Upgrade apollo components. I needed to upgrade the server components as well because they coexist in package.json.

Hi @lperson, we are going through outstanding PRs and will be closing this. As we previously discussed, apollo has been updated in the latest Spoke release, thank you again for working on this!
