Upgrade MongoDB to v6.x

SUMMARY

MongoDB V4.4 is EOL in Feb 2024 (as per https://www.mongodb.com/support-policy/lifecycles ). It would be nice to have a version upgrade to V5.x.

Background: We are using external MongoDB provided by our internal DB team. They started upgrading the DBs from the previous version to v5.x. DBs used by Stackstorm are currently on an exemption list as we want to stay close to OS implementation.

Would it be possible to skip V5.x and immediately update to 6.x ? That would help with supporting Ubuntu 22.04 for which mongodb 6.x is the lowest supported version.

@nzlosh I wonder if there is any move on this one since

v4.4 EOL Feb 2024 v5.0 EOL Oct 2024 v6.0 EOL July 2025 (seems a reasonable candidate)
