could you specify what exactly would you like to have here? Notes have no source code here, everything is simply shown the way you type it in.

Not talking about source code in notes, it could be really useful to have Markdown. It could make notes a little bit better (more beautiful and really more readable), like add titles, bold, italic. And if you want to keep your app simple, Markdown is light and simple

it could be used only in the widget though, in the app itself you see what you write. I dont want to split it into an edit and view mode.

Well I think it would be really better because notes with plain text only are a bit... Ugly. But I understand your choice, good luck for the next!

This honestly feels like the last feature Simple Notes is missing, I've been looking at other note apps to fill the gap but I really wish I could have it all in this one neat app.

I think people are talking about several different things here, because you do not have to split things into two separate modes if that isn't desirable (and I'd agree that it should be kept as a singular mode). For a quick in-browser preview of how this would function without splitting things into view and edit modes, check out https://stackedit.io/app. If it opens in two panes on your device, just ignore the fully rendered pane. This has been implemented in Obsidian, Markor, and quite a few other desktop and mobile editors. I believe Discord also works like this on the desktop. This would allow for markdown editing, but you still "see what you write." No characters are changed, just styled.

I like this a lot and would love to see it implemented!

I would love basic markdown. To be able to bold and make headers would be so nice to make things more readable.
