it will be awesome but mailcow is a full docker stack of multiple interconnected application. Instead it will be easier to integrate apps you want inside mailcow stack via docker-compose.override.yml. They have few example in their documentation (https://mailcow.github.io/mailcow-dockerized-docs/third_party-borgmatic/#create-or-amend-docker-composeoverrideyml)
